    Mediterranean is homeland of this plant, where celery is found in wilderness. People living in Ancient Hellas considered peculiar smell delicious and distinctive taste of celery, and believed that it arouse sensuality and passion. In the Renaissance, a description of therapeutic properties of this plant takes pride of place in all medical treatises. At the same time in Italy, through a long selection, petiolar and root vegetable celery was derived. Within a short time, these vegetables have become popular throughout Europe, and their taste definitely mentioned in cookbooks. First, celery began to grow as a medicinal plant, and then as an aromatic seasoning, which greatly improves the smell and taste of food. Biologically active substances in all parts of celery and fennel have a beneficial effect on metabolism, improve fluid and electrolyte balance, and normalize the function of the cardiovascular and nervous systems, increase physical and mental abilities, improve mood. So, these plants are often used in the (dn) dietary nutrition by people with various diseases of the stomach and digestive system. Since the XIX century, celery seeds and fennel are used in the traditional cuisines of Germany, Italy and Russia to flavor marinades, vegetable dishes, salad dressings, soups, tomato sauces. Even in our time celery salt, which is a mixture of seeds or dried and ground roots of celery and salt, became very popular. This is a great seasoning for dishes made from vegetables, fish and meat. Infusion of celery seed and fennel is recommended to drink as a prophylactic agent for preventing acute urolithiasis. Root celery can be recommended as a dietary product in gastritis and gastric ulcer and duodenal ulcer in the background of normal and reduced secretion, as well as in violation of water-salt metabolism and prevention of hypovitaminosis.
