Fragrant Fennel and its Use

    Homeland ordinary fennel, as celery, is Mediterranean countries, particularly Italy, where it since ancient times cultivated as a medicinal plant, and later as a vegetable. There are two varieties of this plant - ordinary or pharmacy fennel and Italian (Florentine) or vegetable fennel, sweet anise. Fennel has acted as a universal tool that can counteract any poison to cure eye diseases, relieve edema, liver disease, kidney, bladder, kidney stones in all medical treatises from the early middle ages and the Renaissance, inclusive. In modern therapy, the infusion of fennel seeds are used in diseases of the gastrointestinal tract, accompanied by cramps bowel, flatulence, dyspepsia, pain in the gut spastic nature. This plant, like celery, is also nominated for the improvement of appetite, increased secretion of gastric and pancreatic juices and bile secretion. Fennel is also used in (dn) dietary nutrition by people with different health problems in digestive system of the gastrointestinal tract. Infusion of fennel can be used for upper respiratory tract, accompanied by dry cough, sputum to liquefy. Biologically active substances contained in seeds have spasmolytic effect and calms the central nervous system. Therefore, infusion of seeds is recommended to use with milder forms of coronary heart disease and early stages of hypertension. The fruits of fennel are used in the production of liqueurs, confectionery, mainly cookies, pies and puddings. They give a special flavor of sauerkraut and pickled tomatoes, pickled vegetables (especially cucumbers and apples) and cold dishes. The fruits of this plant are part of a mixture of Chinese "five spice" mixture and the French "Provencal herbs" that are sold as a finished product. "Five Spices" is flavourful condiment that is a blend of cassia (Chinese cinnamon), celery, fennel, Sichuan pepper and cloves. With the growing popularity of Chinese cuisine, this seasoning has become quite famous in world cuisine. "Provencal herbs" is herbal mixture consisting of rosemary, basil, celery, thyme, sage, peppermint, garden savory, oregano, and marjoram. The mixture has a unique flavor, and many culinary and medicinal qualities. It is recommended to give the taste and smell of fresh diet meals, when used in a diet without salt. It is widely used as an additive to soups, sauces and salads.
